Ingredients:
2 boneless, skinless chicken breasts
3 medium zucchinis, spiralized into noodles
1 cup heavy cream
1 cup grated Parmesan cheese
2 tbsp butter
2 cloves garlic, minced
Salt and pepper to taste
1 tbsp olive oil
Instructions:
Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper and cook for 6-7 minutes per side until fully cooked. Remove from heat and slice.
Make the Alfredo Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until the sauce thickens, about 3 minutes.
Prepare Zucchini Noodles: In a separate pan, sauté the zucchini noodles in a bit of olive oil for 2-3 minutes until tender but still al dente.
Combine: Add the zucchini noodles to the Alfredo sauce and toss to coat. Top with sliced chicken and serve!
