Keto Avocado Egg Cups: A Perfect Breakfast
– 2 ripe avocados, halved and pitted
– 4 eggs
– Salt and pepper to taste
– 1/4 cup grated cheddar cheese
– Fresh parsley for garnish
Instructions:
1. Preheat the oven to 425°F (220°C).
2. Cut the avocados in half and remove the pit. Scoop out a little bit of the flesh to make room for the egg.
3. Place the avocado halves on a baking tray and crack an egg into each half.
4. Season with salt and pepper, and top with grated cheese.
5. Bake for 12-15 minutes, or until the egg is cooked to your liking.
6. Garnish with fresh parsley and enjoy!
