Keto Chicken Alfredo: A Low-Carb Comfort Food
– 2 chicken breasts, boneless and skinless
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 1 cup heavy cream
– 1 cup grated Parmesan cheese
– 1/2 cup chicken broth
– 1 tsp Italian seasoning
– Salt and pepper to taste
– Zucchini noodles (optional)
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for 6-8 minutes on each side, until fully cooked through.
3. Remove the chicken and slice it thinly.
4. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
5. Add chicken broth, heavy cream, and Parmesan cheese. Stir to combine and simmer for 5 minutes until the sauce thickens.
6. Return the chicken to the skillet and stir to coat with the sauce.
7. Serve over zucchini noodles or enjoy as-is!
